Vegan Scrambled Eggs

Cook Time: 8-10 mins

Servings: 3-4


Ingredients:

  • 1 block of tofu

  • 1 tsp turmeric powder

  • ½ cup filtered water

  • 2 tbsp nutritional yeast

  • 1 tsp black salt (Kala Namak)

  • 2 slices Vegan cheddar cheese


You will need: large pan


Instructions:

  1. Crumble the block of tofu into large chunks and place into pan. (Tofu will continue to crumble as you cook and stir it.) Turn pan on medium heat and season tofu in pan with salt, pepper, nutritional yeast and turmeric powder.  

  2. After seasoning, add water to pan and mix in. Never dig spatula into tofu, but scoop from under and turn over to give it the fluffy texture. Let tofu cook for about 7-8 minutes and stir occasionally.

  3. When water in pan is just about all evaporated, gather tofu together and place cheese on top. Let the cheese get melty, add black salt, then stir and mix in following technique above. Mix until cheese in tofu is evenly 

  4. Fluff and serve! Enjoy like a real scrambled egg breakfast!
