"Refried" Bean Tostadas

Prep time: 20 min

Cook time: 15 min

Servings: 8 tostadas


  • 1 cup cooked Peruvian beans (or choice of beans)

  • 2 tbsp Soy Chorizo 

  • 8 corn tostadas 

  • Salt and pepper to taste 

Topping options:

  • Sliced tomato

  • Yellow peppers

  • Cilantro

  • Cabbage

  • Lettuce

  • Salsa

  • Avocado 

  • Possibilities are endless 

You will need: 1 medium pan


  1. Turn stove on to medium heat. Add cooked Peruvian beans and Soyrizo ( Trader Joe’s is my fav) to pan. You want to add about ½ cup bean broth as well. If you are using canned beans or you don’t have bean broth leftover you can add vegetable broth.

  2. When beans are simmering, turn heat down a little and begin mashing beans with the back of spatula or with a potato masher. Add extra bean broth or vegetable broth as needed. Once mashed to the texture of your preference set aside and let cool off for 5 minutes.

  3. Take a spoonful of refried  beans and spread on top of the tostada. Repeat for as many tostadas as you’d like. Slice vegetables and toppings of your choice to pile on top of the tostadas.
