2 portobello mushrooms
1 cup broccoli
1 cup green lentils
1 Trader Joe’s frozen brown rice bag
2 cups water
1 can diced tomatoes
1 tbsp vegan bouillon
1 tbsp minced garlic
1 tbsp olive oil
1 tsp paprika
Sprinkle of cayenne pepper (optional)
1/2 cup cilantro
Salt and pepper to taste
You will need: medium pot, large pan, microwave
Bring water to a boil in a medium pot. Add lentils, vegan bouillon and bring heat down to a simmer. Simmer for 15 minutes or until lentils are soft and then drain.
Slice portobello mushrooms. Cut broccoli into small florets. While lentils are cooking turn large pan on medium heat and sauté mushrooms and broccoli for about 7 minutes. Add salt and pepper to taste.
Microwave Trader Joe’s Brown rice bag for 3.5 minutes. Set aside mushrooms and broccoli once they are done cooking.
Turn pan to medium heat and add olive oil with minced garlic. Sauté garlic for 1 minute and then add lentils, small can of diced tomatoes, paprika, cayenne pepper, salt and pepper to taste.
Serve lentils and vegetables over brown rice and garnish with fresh cilantro.
