1 large can of jackfruit in brine
1 tbsp canola oil
1 tsp minced garlic
2 tsp ground cumin
½ tsp paprika
1 tsp cayenne powder
Salt and pepper to taste
You will need: 1 large pan
Open can of jackfruit, drain and rinse. Shred jackfruit and dry with paper towels. Turn pan on medium/high heat, add canola oil and garlic. Sauté for about 1 minute.
Add jackfruit to the pan along with all the spices and sauté for about 10-15 minutes until golden brown. Add little more oil if you need to.
Serve with tortillas, beans and rice or as tacos with cilantro and your favorite salsa verde. I personally love to add salsa verde, black beans, avocado and cilantro like the photo above
