Jackfruit Carnitas

  • 1 large can of jackfruit in brine

  • 1 tbsp canola oil

  • 1 tsp minced garlic

  • 2 tsp ground cumin

  • ½ tsp paprika 

  • 1 tsp cayenne powder

  • Salt and pepper to taste

You will need: 1 large pan

  1. Open can of jackfruit, drain and rinse. Shred jackfruit and dry with paper towels. Turn pan on medium/high heat, add canola oil and garlic. Sauté for about 1 minute. 

  2. Add jackfruit to the pan along with all the spices and sauté for about 10-15 minutes until golden brown. Add little more oil if you need to. 

  3. Serve with tortillas, beans and rice or as tacos with cilantro and your favorite salsa verde. I personally love to add salsa verde, black beans, avocado and cilantro like the photo above
