Hearty Chili


  • 1 tbsp olive oil

  • 1 onion, chopped

  • 1 bell pepper of your choice

  • 3 cloves garlic, minced

  • 1 jalapeño, finely chopped

  • 1 small can of tomato paste

  • 1 can black beans

  • 1 can kidney beans

  • 1 can garbanzo beans

  • 1 (28 oz) can fire roasted tomatoes

  • 3 cups vegetables broth

  • 1 tbsp cumin

  • 1 tbsp chili powder

  • Salt and pepper


Toppings:

Tortilla chip crumbles

2 Avocados, diced


You will need:

Large pot


Heat the olive oil in a large pot then add onion and bell pepper. Sauté for about 5 minutes and then add garlic and jalapeño and sauté for about another 2 minutes.

Add tomato paste to pot and mix with vegetables. Add tomatoes, broth, beans and seasonings. Add salt and pepper to taste.

Bring to a boil and then reduce to a simmer for about 15 minutes.

Top with tortilla chip crumbles and avocado and enjoy!
