Breakfast Tacos

Cook Time: 15-22 mins

Servings: 8 Tacos


  • 2 medium potatoes 

  • 1 ½ cup mushrooms

  • 8 corn tortillas 

  • 2 tbsp soyrizo 

  • 1 tsp cumin

  • Pinch of cayenne pepper 

  • 1 tbsp canola oil

  • Salt and pepper to taste

You will need: 1 large pan, 1 large flat griddle (comal) 


1. Dice potatoes and mushrooms. Try to dice them evenly and into small pieces.

2. Heat large pan on medium heat, add oil with potatoes and cook for 10-12 minutes. Mix in the mushrooms, cumin, soyrizo, cayenne pepper, salt and pepper and cook for another 5-10 minutes.

3. Turn griddle on medium high and heat your tortillas, add mushroom potato filling and serve with your favorite toppings like avocado and cilantro
