You will need: 1 large pan, 1 large flat griddle (comal)
Dice potatoes and mushrooms. Try to dice them evenly and into very small pieces. Heat large pan on medium heat, add oil with potatoes and cook for 10-12 minutes. Mix in the mushrooms, cumin, soyrizo, cayenne pepper, salt and pepper and cook for another 5-10 minutes. Turn griddle on medium high and heat your tortillas, add mushroom potato filling and serve with your favorite toppings like avocado and cilantro
You will need: a large container, small spatula or whisk, blender
Measure out your oats, milk and maple syrup into the large container and mix together well to set aside. Place in the refrigerator overnight or for at least 4 hours. Defrost frozen strawberries in refrigerator. When ready to serve blend frozen strawberries to make your “jelly”. Add peanut butter and strawberry jelly to your oats and enjoy''!
*you can try adding the jelly and peanut butter to mix it in the night before but I really enjoy adding to fresh the morning of.
*you can also use fresh strawberries but frozen strawberries are usually sweeter and much more affordable but equally as nutritious.
You will need: 1 large mixing bowl, 1 medium whisk,
Pour chia seeds and coconut milk into mixing bowl. Mix together well using the whisk. Let sit for about 5 minutes and then whisk again due to clumps that may form after a while. Stir in the vanilla extract and maple syrup. Place mixture in refrigerator overnight or for at least one hour before serving and adding the toppings. Mix in your toppings an enjoy!
